Italian Scrambled Eggs

I am always looking for new ways to make scrambled eggs since I eat eggs all the time and it can get pretty boring eating them plain. Morgan actually gave me the initial idea for this new recipe. Hope you enjoy it!

Italian Scrambled Eggs
3 small eggs
baby spinach
1 tomato, diced
salt and pepper to taste
1 small clove of garlic, minced
Italian seasoning
EVOO
 
Oil a pan with a little of the EVOO. Set to Med heat
Add all the ingredients, with desired amounts.
Use a spatula to consistently stir and scramble your eggs.
Cook it as well as you desire and then enjoy :)
